Nutritional Composition and In Vitro Antioxidant Activities of Seed Kernel and Seed Oil of Balanites roxburghii: An Underutilized Species

The seed kernel of Balanites roxburghii Planch., an underutilized species, yields a substantial amount oil and has impressive fatty acid profile. Both cake have the potential to be rich nutritive sources. With this view, in present study, profiling including HPLC quantification tocopherols phytosterols been done. Further, total phenolic content antioxidant activities also analyzed. showed good proximate composition with 43.20% 10.96% protein macro- microelements. possesses 5.36 mg/kg carotenoids 7.29, 1.79, 0.72 mg/100 g α, β + γ (together), δ-tocopherols, respectively. β-Sitosterol is major phytosterol 126.90 followed by stigmasterol campesterol together (40.78 oil). It squalene (17.45 Oleic (56.38%), linoleic (18.77%), palmitic (17.79%) were found acids. Seed possess significant 2.72 mg Gallic equivalent (GAE)/g 8.90 GAE/100 content, Even though kernels contain some anti-nutritional factors, they can minimized practicing appropriate food processing techniques. Considering all these facts, such as availability, quality oil, proteins, elemental composition, seeds B. could considered reliable source increase base people get variety nutrients.
